High altitude and wide day–night temperature variation promote slow cherry maturation, high bean density, and a complex acidity.

The range of coffee varieties is virtually endless. Rather than commercial cultivars, Ethiopia is home to wild and semi-wild genetic groups adapted to the unique microclimates of individual valleys.
Processing methods include classic washed, natural, and honey processes, as well as experimental anaerobic and extended fermentation techniques.
