Processing is predominantly washed, carried out at small co-operative stations using manual depulpers, fermentation in concrete tanks, and patio drying. Quality is highly dependent on weather conditions, but well-processed lots deliver clean, balanced cup profiles.
The principal variety is Typica, often associated with Haiti's historic Blue Mountain lineage. Coffee is traditionally grown under the shade of mango, avocado, breadfruit and native trees, helping to preserve soil health and develop sweetness despite the country's extensive deforestation.
Processing methods & main varieties
Haitian coffee is typically soft and rounded in the cup.
Common notes: brown sugar, cocoa, nuts, milk chocolate, citrus zest and delicate spice.
Higher-altitude lots may show notes of apple, dried fruit and subtle floral characteristics.
